The broken blocked stuff looks like tofu. I didn’t see any vital wheat gluten going in.

Any health food store should have it like Whole Foods, sprouts. But i also always have it linked to order from Amazon in blog posts and the UA-cam description box
If you have an Asian foods market near you, they will have it. I can also find it in the Asian foods aisle at my regular market.
Do you think it will be ok to use cornstarch instead of tapioca flour? Thanks 👍
Hi the tapioca starch is it what gives the gooey, cheese-like stretchy texture. Cornstarch won’t do that it will just thicken. If you want to try you can but just know the outcome won’t be the same
